Were you ever ridiculed for somethingn tied to your cultural identity and/or race? Do you see why that might make someone mad? It's one thing to be the brunt of jokes for playing Nintendo® Pocket Monsters™, and another thing to be laughed at because of your heritage. There's an inherent racist mentality involved.

I don't even want to get started on food labor. You have so many assumptions that french food is far more labor intensive than mexican (conglomerate) food, which I guess on the surface moght appear like that. You know what a molecajete is? Did you know they use it to make guacamole? People are even peeved at paying an extra $1.50 for guacamole at nonauthentic-chipotle that isnt even hand mashed. If you dont want to believe that, look at dim sum or even xiaolongbao. Folding those things is not trivial in any way. People still expect it to cost <$10 even though they're willing to pay >$20 for a plate of ravioli which is much easier to make.

And even cultural policing!!! So stupid. It's so hypocritical to villify dog eating and not cow/pig/chicken eating. It's just as cruel for any of them. (Not that i eat dog. Or any meat for that matter)

Yup and yup. Some people stay mad; some don't. If I had concrete advice on not staying mad at ten-year-old remembrances of people, I'd offer it here, but I have trouble caring about people who were once jerks. Sorry.

fun_yunchables wrote:assumptions

Conjectures. I've only recently gotten into cooking for myself and I tend to avoid anything remotely labor-intensive. Plus, a lot of my guesses depend on guesses at what can — and cannot — be made by mechanized processes.

One could make guac in a molcajete, but one could also drive the price of guac down by designing and building a machine to slice open avocados, pit them, scoop them out, mix in spices and things, and then put it in a package. My hunch is that most Mexican food in the States tends toward the automatable and the harder-to-screw-up and doesn't seem to suffer for it much, while a French chain that did that wouldn't have many customers.

I'm not all that into guac, so I wouldn't pay an extra buck and a half for it at Chipotle. A Mexican place that wanted to go upscale could experiment with different varieties of guac and charge more for it, but for some reason the Mexican places around here aren't interested in R&D like that. A pity; I think they're leaving money on the table.

fun_yunchables wrote:If you dont want to believe that

It's not a matter of wanting to believe; it's a matter of whether "guacamole can be made in a labor-intensive way and people eating at a fast-casual restaurant will oftentimes balk at paying for it" is convincing evidence in favor of "Mexican food, generally, is no less labor-intensive than French food, generally" and, if so, how strong the evidence is. I'd say this isn't very strong evidence; there are a lot of different things that Mexican places make, and there's more than one way to make a lot of guacamole. For a commercial kitchen I'd expect it to be made in a stand mixer, at the very least.

fun_yunchables wrote:look at dim sum or even xiaolongbao. Folding those things is not trivial in any way.

I was watching a Tastemade thing on Snapchat where the TV chef had chocolate-stuffed potstickers. Looked pretty good, but that seemed way too labor-intensive for something I'd make for myself.

Judging from the time I went to a Chinese seafood place, I'd expect $10 xiaolongbao to have giant gobs of undercooked fat making the Trader Joe's potstickers look like a model of consistent quality. Contrariwise, I'd expect a $20 ravioli plate to have two liters of ravioli on it, have filling that's strongly flavored by saffron, or both.

To expand on the above, Adiabatic everything you're posting is either orthogonal to the original point or wrong. This is a chronic problem with you. Think deeply about why that might be and get back to us with an answer that doesn't purely blame the rest of the world.

i'm so excited for whatever artistic movements are ostensibly "after post-modernism" / when music and architecture start getting deemed metamodernist (Tim Hecker? To Pimp A Butterfly? Rem Koolhaas?)

Is there a thread about general musicianship/c-t songwriters? I could have sworn there was one separate from WAYLT and music is my bf, but I can't find it

My housemate told me about this odd South African country town she heard about when she was studying in SA that's almost 100% Afrikaner where they actively chose to segregate themselves roughly around the period apartheid ended and build their own town. They've even established their own currency. Surprisingly,it's not as racist as you'd imagine*. It's quite fascinating.

like people brought up in the rep comments art (and its discourse) is too popular and too fragmented for a ~genre~ as broad as "post-post-modernism" implies, the term will come later if/when there is a common characteristic to OUR reactions to OUR PARENTS' boring and offensible so-called "post-modern art".

so, i've decided i hate post-modernism. i'll decide why later. this is troublesome though because i was already taught by my friends in architecture school to hate modernism, so i can't just go back

I found the hours-to-curses rate for being in New York City. That's why people always say it's not healthy. Every four hours one more terrible spectre will enter your chakra and make itself felt through fate-tampering. If you're planning a vacation, make sure to include no more than 3 hours of New York, unless desolation and financial collapse are things you're interested in.

Where I live the rate is abt every 12 months, and the curse is crippling depression and stagnation. It's dangerous because it sneaks up on you

I know it's gonna be far out for me but u know I jus wanna think long term, now :]
