I feel bad saying this but I had a pretty solid last year. I was briefly unemployed when everything closed last spring and it was fantastic--- I've never gotten that much done in my life. I improved upon a lot of food skills and wrote a full notebooks worth of recipes: honed my bread shaping, gained confidence in my laminated doughs, pasta (udon, ok soba, and the standard shit), pies and tarts, elementary raw goat cheesemaking, safe large scale canning and fermenting, making all my own condiments, growing lots of koji and various projects from that, growing mushrooms (in process), growing a lot of other things. Obviously I have tons more to learn in all of these arenas but got a solid foundation now. Learned some basic welding and wood projects which is always ongoing but completed some functional things with a lot of guidance. I learned how to do a full rear derailleur adjustment without watching that Parktool video 100 times which is probably what I'm most proud of...
